Kitchen Sink (Early) Summer Salad

Yesterday was the warmest day yet of Grace and Emmett’s lives. For the first time I actually took layers off (rather than chasing them around with hats and socks) and let them practice crawling (which at this point is a scoot with thrusts of the feet).

But with Mom and Grandma Deborah at home in upper 80 degree weather, what’s a girl to make for dinner? I concocted a new, yet-to-be-world-famous, salad:

The Kitchen Sink (or Everything But The…) Early Summer Salad:

Bag of organic baby lettuce

Handful sliced ripe strawberries

Handful walnut halves or wholes

2-3 cooked (and cooled) sliced beets

Cooked chunks pork chop (maybe chicken would be good too, or eliminate meat if not serving as an entree)

Goat cheese crumbles

Top with balsamic vinaigrette and enjoy!

You might think I’m crazy, but it was a big winner around this house.

  1. Wow! your salad sounds great. I have some beets to cook and hope they are still
    good. I love beets. Great to see Grandpa David with Emmett. He sure looks proud.
    Funny that Grace is Strawberry Shortcake. I was cleaning out some cards and just
    today found a card you painted for me I think years ago. It was strawberries. You were making me strawberry shortcake but I had to come to CA to get it. That must
    have been before your graduation. I think Emmett must be very happy he likes
    to laugh in his photos. Realy cute photos of both of them. Glad you are having
    hot weaather. We had 70’s but now we are getting cold and will probably get a
    little snow tomorrow. Then we go back 60’s and 70’s by Thursday. Crazy! Thanks

  4. I gotta say the salad recipe isn’t at all exciting to me … at least in comparison to those new pics, Westi. What a hoot Emmett is! I can’t wait to see them again … he looks like he’s totally growing up without me!!!

  5. Emilie, I thought of your blog when I posted this. :) Eliminate the meat and it’s a fab veggie dish! Or, alternatively Mike and I love putting the Trader Joes “Chick Nuggets” on top. Mmm!
